Modak |

| INGREDIENTS
for filling: |
| Fresh
grated coconut 1no |
| Sugar
or grated jaggery 1/4 cup |
| Powdered
cardamoms pinch |
| Procedure |
- Mix the jaggery, coconut, cardamom powder in a
pan cook over a slow flame till the liquid has evaporated
and mix till it is moist.

for pastry: |
| Rice
flour 1/4Kg |
| Water
1cup |
| Unsalted
Butter 1/4 teaspoon |
| Salt
pinch |
| Procedure |
- Take a sauce pan bring water to boil with butter
and salt.
- After the water is boiled reduce the heat and
put the rice flour.
- Keep on stirring constantly so to prevent it from
lumping.
- Once the steam rises from the mixture it is ready
.
- Remove the mixture in a platter till it cools.
- And knead it into a dough. Make into small balls.
- Use rolling board and pin. Roll each ball into
a circle 3-5 inches wide.
- And stuff the filling in the center of each circle
3-5 inches wide.
- Using finger shape the edges to create a flute.
- Use a pan a top with sieve sits comfortabely.
Steam the modak to 3-5 minutes, till the dough and
filling has cooked.
- A serve them fresh hot.
