Maharashtrian cuisine is usually defined as very strict, when spoken of in its traditional nature. However, there's much more to it than meets the eye. There's the Malvani cuisine from Konkan, a small Udupi influence from regions towards the southern tip of the state, the Parsi influence in cities like Mumbai, which have now merged with Maharshtrian preparations.
Desh, Maharashtra, Khandesh, Marathwada and Vidharba - therein regions in Maharashtra, have their own distinct cuisine. The bhakri - long lost as a staple - is now being introduced in households again.
In between famous thalis, common desserts, and unique preparations, we have not probably discovered our own cuisine to the fullest. In this festival, in one meal, you get to witness a variety of recipes, desserts, breads, etc., most that you have never heard of before!
